I want to share a snippet from Chef Afreen’s interview with you.
Chef Afreen is originally from Pakistan but was raised in Toronto and currently resides in San Francisco. She is also a professor at the California Culinary Academy. When asked, “Is there a culture that inspires your dishes? What kind of experience do your dishes create for others?” Chef Afreen mentioned the significant influence of French, Mediterranean, and South Asian cultures on her dishes.
She emphasized Mesopotamia as the mother of kitchens and stated that she believes in such diversity. Chef Afreen mentioned that she draws inspiration from the unique recipes of these ancient civilizations in her dishes, presenting original tastes to people. She also noted that there is a silence among people when they eat a meal while thinking about the chef. Chefs imagine the journey of the food they prepare and emphasize the concept of food ethics.
